Bacon Quiche


This is a super easy and good for 4 people or one person to eat for a couple days like me. Of course quiche is nice because you can look around your fridge and put whatever your favorite ingredients are to personalize. Get crazy with it and it's probably going to be great. Also if you use a very salty meat like bacon be careful not to over salt. But here is how I made what you see in this picture.

4 extra large eggs beaten
1 cup whole milk
1 cup shredded low moisture skim mozzarella
1 tsp kosher salt
1/2 tsp fine ground black pepper
2 large fresh basil leaves chopped fine
1 tbsp fine chopped fresh chives
2 chopped baby Bella mushrooms
1/8 cup small chopped broccoli
1/4 tsp dried parsley
6 small strips of crispy bacon

So cook your bacon thoroughly till crispy but not crumbly then let cool a bit and chop. Crack your eggs into a large mixing bowl and add milk then beat. Add in bacon and the rest of the ingredients to the egg mixture and stir well. Then pour into a pre made pie shell (I'm lazy) in a glass pie pan. I grease the glass with pam. Then bake at 350 for about 40min or until the middle is done. You can check that by sticking a knife in the middle of it comes out clean it's done.
